cuisine in their restaurant Rosewood Bar & Grill where they feature
the NEW WALDORF SALAD. If you can’t escape just yet, try creating
this delectable delight at home for friends and family.
NEW WALDORF SALAD
- 4 cup red seedless grapes halved
- 4 cup green seedless grapes halved
- 4 cup dried cranberries
- 3 cup sliced celery
- 2 tablespoon grated orange peel
- 1 tablespoon pepper
- Pinch of salt
- 6 cup mayonnaise
- ½ cup sugar
- 16 red apples medium diced
(soak in water with sliced lemons or anti-browning solution)
- 8 granny smith apple diced
(soak in water with sliced lemons or anti-browning solution)
- 4 cup crumbled Gorgonzola cheese
- 6 cup glazed walnuts
- 1 red apple halved and sliced (soak in water with sliced lemons)
Drain apples. Add all ingredients except sliced
apples, cheese and walnuts to a large mixing bowl and toss until
well mixed. Transfer
to another bowl or platter, sprinkle with glazed walnuts and cheese,
and arrange apple slices on top. May also be garnished with sliced
avocados.
Makes 50-5 oz servings (15 pounds)
If Plating
Thinly slice 25 heads romaine lettuce
Prepare dressing as follows:
- 3 cups mayonnaise whisked until smooth
- 1 ½ cups apple juice
- 2 tablespoons cider vinegar
- 1 tablespoon sugar
- Pinch of salt and pepper
- 3 dashes Tabasco and Worcestershire
Whisk mayo in a bowl and add remaining ingredients,
whisking until smooth. Toss with lettuce and place 2oz on plate. Scoop
a 5 oz portion (#8 scoop) of Waldorf salad on lettuce and top with
candied walnuts, bleu cheese and a few dried cranberries.
