Wine Country Tips

Proof that Spring in the Wine Country is just around the corner - winter daphne, flowering quince, and mustard are all blooming! Soon we will have bud-break in the vineyards…

It has been told, that years ago (before the process of fermentation was understood) people noticed wine in the cellar often started to ferment again in the spring - they wondered if the wine was responding to the "mother vine" in the vineyard, which was beginning to bud…

Now we know that this fermentation, malolactic fermentation, was triggered by the warmer springtime weather.

Most all red wines and some whites (particularly certain Chardonnays) go through some degree of malolactic fermentation, which is caused by strains of malolactic bacteria (not yeast). In addition to helping stabilize the wine, this process results in the conversion of malic acid to lactic acid - lactic acid is softer, less astringent, and can produce buttery or creamy sensations in wine.

Malolactic fermentation can occur naturally, but generally the wine is inoculated with specific cultures and encouraged to ferment long before Spring arrives…

Not as romantic as the "mother vine" story, but it makes for good wine!

"My idea of heaven is relaxing on a Friday evening with my husband, enjoying a box of superb chocolates and drinking a bottle of fine red wine. Mesmerized by only the sound of a crackling fire after a week of hard work has been completed - and our two young children are tucked into bed.
