Editor's Notes: Napa Valley Mustard Festival
The Wine Country is golden with mustard blossoms! It's time to celebrate this visual promise of spring, and the arts, culture, and agriculture of Napa Valley… The Napa Valley Mustard Festival is in full swing! http://www.mustardfestival.org/

A new feature for our newsletter - Recipes from the Wine Country!

The first recipe comes from Kathleen McGowan Inman, owner of Olivet Grange, a charming vacation rental in the Russian River Valley http://www.olivetgrange.com/ To recreate an authentic taste from the wine country try making this at home and let us know how it turns out.

Seville Orange Pudding
Serves 6-8

85g (1/3 c)
230g (1 c)
grated zest and
5 large eggs
60g (1/4 c)
1/2 pint (10 oz)
unsalted butter at room temperature
granulated sugar
juice of 3 Seville Oranges
separated
flour
whole milk

Preheat the oven to 350F

Butter a soufflé dish. In a large mixing bowl, cream the butter and sugar until light in color and fluffy. Add the orange zest and juice and then the egg yolks, one at a time, beating well. The result will be a curdled mixture to which you add the milk and flour alternating until all is added.

Beat the egg whites until stiff and then fold into the orange mixture. Pour into the soufflé dish and place on a rack in a roasting tin and pour water half way up the side of the soufflé dish. Bake for around 50 minutes until nicely browned on top. Serve warm.

The result is a luscious sponge pudding that rises like a soufflé and forms its own custard at the bottom. Four Meyer's lemons may be substituted for the Seville oranges.

This is a weekend not to be missed, and an unusual treat throughout the Valley. This event sells out early.
